Lamb loin chops with herbed croute

Yield: 3 to 5 servings
Prep: 40 min.
Cook: 20-25 min
 
Ingredients:
 
2 – 2 1/2  lbs. lamb loin chops
3 tablespoons butter
1/3 cup fresh herbs (such as rosemary, parsley, oregano, mint, etc)
½ cup panko bread crumbs
Salt & pepper

Directions:
 
  1. Tenderize lamb chops on both sides by using Nixax .
  2. Sprinkle salt (preferably kosher salt) on both sides of lamb
  3. Make croute —in a small bowl, mix softened butter, panko, finely chopped herbs, and a pinch of salt.  Transfer the mixture in a plastic bag, make a thin croute sheet with a rolling pin, and lay flat in the freezer for at least 30 minutes.   
  4. In a large skillet, heat general oil at high heat and add lamb.  Cook about 1-2 minutes on each side until brown.  Remove from skillet and set lamb aside on the flat plate. 
  5. Take out croute sheet from the freezer and cut into the same size as each lamb chop and place it on top of lamb chop. 
  6. Preheat oven at 360 degrees and bake lamb chops with croute for 5-7 minutes until panko turns brown.
